Bday party

It has been a very long time since I've gone to a bday party for anyone under the age of 15. Yesterday, however, I went to my niece's 2nd bday party. Actually, I didn't just go... I made the cake as well :)

I used a butterfly shaped pan I bought on clearance at wal-mart. I did a trial cake earlier this week and it turned out so great! It baked way above the pan so evening out the bottom was a cinch! However, I should have known the actual cake would be a different story. It did rise, but not nearly as much as the first cake. It also broke completely in half when I tried to take it out of the pan. Thank goodness for icing! I put the cake back together and had to do some tricky slicing to get it even, but I did it! Ugh it was so much work but totally worth it.

I made some matching cupcakes too. The bday girl was very excited about her cake (well, at least about eating it!!).

What a Rip!

You already know that today was daylight savings day, so we "sprung forward" our clocks last night, making today a 23-hour day.

What you may not know is today is my birthday. My 23rd birthday at that.

So I feel a little ripped off that my birthday only lasts 23-hours this year! But am I lucky because it happens to be my 23rd bday that only lasts 23 hours?

Hmm.. maybe I should by a lottery ticket?

Matthew and I are heading up to my dad's for a few days. I'm looking forward to chili spaghetti tonight :)

What a week

Yay for Fridays!

First I want to say welcome to my new visitors! I have noticed a couple of newbies recently and I am glad you stopped by! I hope I don't bore you with my insane ramblings, etc.

Now on to the bloggy part...

Matthew's birthday is next Tuesday so today I threw a little party for him. We went out for pizza and beer (or in my case a salad and diet pepsi haha) and had cake and ice cream back home afterward. We were suppose to have a big group but people kept dropping out. It ended up being our regular group of four: Matthew and me of course and the bestie and her bf. I think he was a little disappointed that more people couldn't come, but I think he enjoyed himself nonetheless. One of his coworkers dropped by the apartment when he got off work though. They are both in the living room talking computer stuff so obviously I had to retreat to my room. It has been a long week and I'm sure all the geek talk would have been enough to bore me to sleep!

I got off topic.. sorry. (although you should be use to it by now!)

Instead of making him a regular birthday cake, I offered to try out a new recipe from HG. I made individual lava cakes! They were really good, super easy, and only 4 weight watchers points a piece. I put a scoop of churned vanilla bean ice cream on top and that just made the whole thing. You can get the recipe here, and I will tell you that it is definitely worth it. Once again I couldn't get any pictures. Everyone's eyes kind of glazed over when I pulled the mini treats out of the oven lol

Tomorrow I'm going to London to visit family. I'm hoping these storms pass quickly so it will be a safe trip. Sunday will probably be reserved for homework since I definitely have a lot of it. What are your plans for this weekend?

Cakes

This summer I felt like being creative for my Dad's and my sister's birthday. I decided to make them cakes... but not just any cakes. Take a look for yourself:

My dad is a big cornhole player. He made his own boards and everything. If you don't know what cornhole is, I have put a video at the end of this post so that you may educate yourself.




It was my sister's 21st bday so I figured a margarita glass was appropriate. I know it looks more like a wine glass... just work with me here.

My Birthday...

... was amazing! It was definitely the best birthday I have had in a long time. Friday night I had my party with my friends. The bestie did an amazing job! I got to see my roommate from when I lived in the dorms (I have really missed her!) and a friend I worked in the lab with last semester, as well as all my high school buddies that go to UK but I don't see very often. There was one minor thing that happened when one friend got a little out of control, but I know she didn't mean any harm, and I was able to fix the situation. We had a fun dinner, then went bowling. There, we met another high school friend that I hadn't seen since last year when the bestie and I went to her father's funeral. We decided to team up, boys against girls. There were four of them and six of us (But it was TOTALLY fair... or not...). Everyone had a blast, and it was just a great night.

Yesterday, Matthew and I got up early to head to my Dad's. I have got to say that my Dad is the greatest... like, ever. When we got there, he took Matthew and they went to get my tires rotated while I stayed in a napped (we were out late Friday night). I knew he was going to do this, but I did not know that he was going to replace my windshield wipers and vacuum/clean out my car! It was totally sweet of him! We had a fabulous dinner of barbeque ribs, mashed potatoes, macaroni and cheese, and green beans. Oh how I miss home cooking! I don't want to sound like I'm bragging, I really just want to prove that my dad is wonderful. My Dad and stepmother decided to get me a birthday/graduation gift all in one. They got me a television! I was totally not expecting it, and it was the sweetest thing ever!! It's a 32" LCD. I cannot wait to watch Edward in High def on Saturday!!

I will post pictures of the party and the dinner later. I got a new camera from Matthew, and I have to figure out how to load them up haha

Catch Up

Haven't posted in a couple of days, so I thought I would catch up. First, here are the pictures I promised from Matthew's birthday weekend.

The cake I made. I used the same pan from Dad's birthday, but I did different colors, and I didn't have any help with this one. I think it turned out pretty well if I don't say so myself lol










I have not been doing too much. I have been busy with school, and Matthew and I have gone out the past couple of times. We needed some time to just hang out again without worrying about school or work. Also, I went on Amazon.com yesterday and ordered the last two books of the Twilight Saga... It was cheaper on there than at the mall, and they should be delivered Friday :D I'm so excited!!!!

I'm not really in the blogging mood right now, so maybe I'll have something better towards the end of the week :)

Amazing Weekend

This past weekend was totally exhausting, but completely worth it. I have a few pictures, and I'll put them up later.

First, Saturday was the UK vs WKU football game. A group of us were volunteering for the United Way during that game to collect money. We all got matching t-shirts and yellow "volunteer" stickers (Matthew ended up wearing ALL of our stickers by the end of the night lol). The first half of the game we took up money. Our legs are killing us today from having to squat in the aisles while waiting for the bucket. If we don't squat, people yell at us for blocking their view.... Anywho, after we finished collecting the money, we dropped it off by the police section in the stadium and went to our seats. We had to hike to them! They were in the upper level and about four or five rows from the top! At least it was nice and cool up there :D We watched the bands at half time. I got to see Chelsea march, then UK's band marched. We decided to go ahead and leave, so I went over to see Chelsea first, then we went to Taco Bell (random, I know). UK ended up winning the game 41 to 3 (OUCH!). I'm excited that we won, but I feel kind of sorry for WKU for getting beat oh so badly.

Today is Matthew's birthday (happy birthday!!!!) so we spent most of the weekend celebrating. I made him an awesome (if I do say so myself ;D ) cake, and he keeps saying how much fun he has had this weekend. We went to his parents house this weekend for his birthday dinner, and today I took him out to dinner and then to the mall. It has just been a wonderful past couple of days.

Happy Birthday Amanda!

Tonight was Amanda's birthday party! We met a large group of friends at Cheddar's to celebrate (there were 16 of us in all). I think everyone had a very good time, and Amanda seemed to enjoy it. I don't have any pictures unfortunately (except for one, but I'm pretty sure Stefan would kill me if I posted it) so, sorry about that. Right now I am just resting. I'm about to get my stuff together for classes tomorrow. I still feel sick, but I can't take any medicine because I don' t want to feel groggy in the morning. I slept sooo good last night in my benadryl-induced coma... I am certainly going to miss that tonight. Anyway, off to get my stuff together and then to bed. Big day tomorrow!
